Chocolate Fondant with a South African Twist

Firstly I'd like to say "Bonjour!" to my newly acquired French readers! It's so exciting to see that my blog is reaching all corners of the globe!!

So, ever since my first trip to Mozambique in February 2013, I cannot get enough of chocolate fondant.
We went to a restaurant called Zambi and we had the most amazing prawns for dinner, followed by an even more delightful dessert...Chocolate Fondant.

Alot of people confuse chocolate fondant with your normal fondant that is used for decorating cakes. There's a major difference though, Chocolate Fondant is easily 1000 times more tasty than fondant icing, and blatantly put - it's your diet's worst nightmare!!

When I got back to Jo'burg I searched high and low for a restaurant that sold chocolate fondant that was as unashamedly chocolatey and downright delicious, as the one I had had in Mozambique, but NONE came close.

I had no choice but to find a recipe!! So I went digging through our recipe books at home, and as usual Mr Ramsay never disappoints!

If you're a chocolate lover like me, then you are highly likely to fall in love with this quick and easy recipe, if you're not then I think you need to pay a visit to your doctor because there's obviously something wrong with you!

Unfortunately we can't live off of these decadent little desserts, well, technically we could, but it isn't recommended! So, just as it goes with all the finer things in life, when trying to stay healthy, moderation is key!

This recipe yields 4 servings and is best served straight out the oven, otherwise your gooey chocolate centre disappears!

What you'll need:

4 7.5cm ramekins (you can also use muffin pans)
50g unsalted butter, plus extra, softened, to grease the ramekins
2 tsp cocoa powder, to dust
50g good-quality dark, bitter chocolate(minimum 70% cocoa solids), broken up in pieces - I use Lindt
1 large egg
1 large egg yolk
60g caster sugar
2 tbsp Amarula - this is a delicious South African liqueur (Any other liqueur such as Tia Maria/Frangelico will work)
50g plain flour, sifted
Vanilla ice cream or crème fraiche to serve

How you'll do it:

1. Heat the oven to 160°C/325°F/gas mark 3. Butter your ramekins and dust liberally with cocoa powder. Make sure you cover all the nooks and crannies so your fondants don't get stuck!Place in the fridge while you prepare the fondant mixture.
2. Melt the chocolate and butter in a small bowl set over a pan of hot water, or in the microwave. Take it off the heat and stir until smooth.
3. Using an electric whisk, beat the whole egg, the egg yolk and the sugar together in a separate bowl, until pale and thick, then fold in the chocolate mixture. Fold in the liqueur, followed by the flour.

4. Divide the chocolate mixture evenly among the ramekins and bake in the oven for 12 minutes.
5. Run a knife around the edge of the dishes and turn the chocolate fondants out onto warm plates. Alternatively you can leave them in the ramekins. (But then your amazing chocolate river will not ooze out the middle when you break it open for the first bite!)
6. Serve immediately, with a dollop of crème fraîche or a scoop of vanilla ice cream.

And ENJOY your tiny taste of heaven!!

Blogging basics

When I started my blog, I had no idea what I was doing, BUT, as with everything else I take on in life, I did TONS of research - the blog even got it's own spreadsheet!

Alot of other blogs told me I had 3 big decisions to make before I started:

1 - Why/what will you be blogging about?
Well! I hadn't thought this one through...The day I started this blog, I was off sick, in bed with Bronchitis. I was SO bored, lying in bed, wandering what to do to pass the time, when I had one of those little "lightbulb" moments. "I'll start a blog! It can't be that hard." So decision 1 - why/what will I be blogging about... I don't know,... baking, recipes, DIY projects, a bit of travel - just life really! I have alot to say. I was born with the gift of the gab. I can blog! Afterall mom did always say she gave birth to a mouth and I just grew onto it, and every single school teacher said I was a friendly child but I disrupted the class because all I wanted to do was chat with my friends! Yes, I have lots to talk about, so I'll start a blog about our life! Ok, so that's decided then.

2 - What will the blog be called?
Well this one was rather tricky, it had to encompass what I would be blogging about - Mainly baking, recipes and our life... after narrowing the name options down to three from about nine (3 of which were already taken! You NEED to make sure your blog name is available!!), I consulted with a few bloggers and we all preferred "Our Flavourful Life". Nice! That only took about 3 hours and umpteen visits to the thesaurus!

Damn! Who knew blogging would be so time consuming!!

3 - What blogging platform will I be using?
How will you create your blog? I knew that you could create a blog using wix, I had seen it when I made the website for my cakery, but I wasn't crazy about the appearance of the blogs. All the other blogs I read spoke about using Wordpress and Blogger. I had tried to use wordpress when I was making the cakery website, but I'm not too technically inclined, and html is rather confusing, you need some knowledge of it to use Wordpress, so that made my decision to use blogger a swift one.

So there I had made my three big decisions, I was ready to tell the world our story, and so the fun began.

I'm still very new to blogging, but in the short time that I have been blogging I can tell you a few things that I love about using the Blogger platform:
  • It time stamps and dates the posts when you publish them, this way you can see when your blog traffic increases in relation to the time (and day) the post was published.
  • You can see how many views your blog has received in a day, week, month etc.
  • You can see which posts were viewed and which countries your readers are from.
  • You can customise the blog to look however you like, there are alot of templates available for download or purchase on which to base your blog.
  • You can link up to all of your social networking sites and you can make your posts pinable.
  • Its easy to use and there's lots of online advice and tips for when you get a little stuck!
  • With a little bit of html knowledge (or a hubby with lots of html knowledge), you can make alterations to the layout of the template and the html code to have a blog that looks exactly how you want it.
  • You can export your blog and back it up! Better safe than sorry, right!
  • It's easy to insert pictures, links, videos and lists into your posts.
  • It has spell check - this is great, I'm a rather fast typer and often switch letters around so this is a godsend for me!
This is not an extensive list, I could carry on, but I'm sure you get the picture!

As a side note I would like to say a few things:
1 - Stay true to yourself and who you are, remember why you wanted to blog in the first place. Don't write about things that don't interest you, even if your readers like it. You're interests and writing style are probably going to change over time, so be it! Write about things you love.
2 - If you don't have anything to blog about then don't blog. Quality over quantity!
3 - Let your personality and uniqueness shine through in your blog design and blog posts. If you're crazy, be crazy. If you're witty, be witty. If you're bitchy, keep it to a minimum, nobody likes a bitch. Jokes! Be a bitch, if people don't like it then they shouldn't be reading your blog.
4 - Who cares if your photos are not taken with a dslr? Chances are you're doing the best with what you have. After all, I have never seen a camera that can take a good photo without the photographer.

It's almost 3 months later and the focus of my blog will soon shift slightly, when we move I'll also be using the blog to keep our family and friends back home up to date on our weekly shenanigans as we continue on this adventure called life!

Follow your dreams

I will drill this into my children's heads one day...because I believe it is important! (Within reason of course - I most certainly don't want a little Evil Knievel running around!)

It is important to follow your dreams, try, and if you don't succeed at least you gave it a go.
You'll be happier knowing you gave it your all and it didn't work rather than always wondering what would have happened if only you tried...

I read a quote on pinterest a while ago - it changed my perspective on life immensely. Here it is...

"Making a big life change is pretty scary. But, know what's even scarier? Regret."

I think the reason that this hit so close to home at the time is because I was just given an awesome job opportunity... Changing jobs really isn't such a big life change, hell some people change their jobs more often than I change my hair. So what's the big deal then?? The big deal is that the job is in another country...on another continent...Thousands of kilometers away from everything we know and everyone we love.

I started waitressing at the age of 15, not for spending money, but to save so that when I matriculated I could take a gap year, move to the UK and have a working holiday. That never happened. Life has a funny way of changing your story, just when you think you know what you want and you have this great big plan of how your life is going to be, BAM!, a curveball! My curveball's name is Riaan (I say this with love), I am so lucky to have met him, I am grateful for him everyday and I never once thought "What if I went to the UK", all thoughts of moving faded away after we started dating, I found my happily ever after. *Awwwww* Ok! End of being soppy!

Call it fate, call it destiny, call it whatever you like, but, as life would have it, we'll be going to live in the UK afterall, the only difference being its a few years later than what I had dreamed of in my early teen years, and I won't be going alone. There it is, the big scary life change!

In the past year ALOT has happened, life is short and I have learnt that you should do what makes you happy. Live your life for you! We are lucky enough to have families that have always encouraged us to follow our dreams and support us in the choices we make.

So that's that...Be happy, live life, and follow your dreams!

One Week in Dubai - A second look

After writing approximately 20 lines for this blog entry I stumbled upon a really interesting post about travel blogging...I found myself agreeing with about 99% of what this blog was screaming at me! This resulted in me scrapping my entire post - Bar line one "Happy Spring everyone!!"

Anyway, now that that's out of the way...I won't be telling you about all the delicious food we ate (a different country's cuisine almost every night!), I will be going head first into the nitty gritty - let's get down to business!

Ah Dubai, what can I say, I miss it already...I was sad to be leaving, but happy to be going home!

When people tell you Dubai is hot you're probably all like "Yeah, yeah, it can't be that bad"...Trust me, IT CAN!! Not only was the average temperature 40 degrees, the average humidity was 70%. CRAY CRAY!!
One afternoon after work we stopped off at one of the malls, parking the car in the underground parking, I opened the door and hopped out, unaware of the impending heat wave outside. As my feet touched the ground, the hot air hit me square in the face, it made me gasp. My boss smiled, this is 50 he said to me. What?? 50 degrees?! I felt ill, nauseous from the heat.
Lesson one - If you can't handle the heat...stay indoors!

The malls are amazing, they stay open until midnight and the variety that they have to offer is mind-boggling. We were spoilt for choice!! Apart from your department stores and clothing shops (from all around the world), designer labels, electronic goods, restaurants, confectioners, coffee shops and juice bars are plentiful! We spent 9 hours at the malls on our first Saturday, 1 and a half of these were spent on the slopes of Ski Dubai!! Can you imagine the pain my poor feet had to endure, not nearly quite as bad as those of the Stepford Wives that were tottering around in 4 inch heels!
Lesson two - wear comfortable, sensible shoes!

Ski Dubai is a MUST visit for at least 2 hours if you're into the whole adventurey, fun kind of vibe. Whether you're a complete amature and have never set foot on a slope (like me!), a veteran skier, or anywhere in between, be sure to pay a visit to Ski Dubai. They have bigger slopes for more advance skiers and for the kiddies and us beginners there are cute little slopes and ski instructors! With penguins waddling around and an entertainment area in the snow dome for the children it makes for the perfect family outing. Do bring gloves and a beanie because it's cold, -4 degrees to be exact, but it's not a bone chilling kind of cold, it just the kind of cold that nips at your nose and lips making them a little numb. They provide a ski suit and skis as part of the package, the ski suit is really warm, I was wearing a thin blouse under mine and it was perfect! Snug as a bug! I even snuck in in my normal clothes for a snowy selfie! Naughty naughty!!

I heard they have Ski parties on a Thursday night, sounds like an absolute blast but unfortunately we never went on a Thursday.

If you find yourself with an open afternoon, book a desert safari, if you don't have an open afternoon, find a way to make one available and book a desert safari!!!! They take you on about an hour long stomach churning, and at some points, heart stopping 4x4 ride through the dunes in the desert to a special spot that is perfect for watching the sun set and taking super-touristy photos like these...

Once the sun has disappeared behind the mountains we hop back into the 4x4 and off we go again, into the desert, sand spraying up against your window as the driver sharply turns and dips through the dunes. After a short while we find ourselves back on the highway, and then back in the desert, seemingly heading for the middle of no-where and then out of the blue (or brown in this matter), we're at a little hideaway oasis, with nothing but sand around you for miles and miles.
We hop out the 4x4, its hot and humid but bearable because the sun is gone and the sky is full of stars, outside the oasis you can ride a camel, quad bike or sandboard. Inside the oasis you are welcomed with the delicious smells of Lebanese cuisine, chicken on the fire and traditional bread in the "oven". Before dinner is served they have a traditional show/dance and a very talented lady belly dancing, there are stalls selling sand art vases, your typical tourist souvenirs and a lady painting henna tattoos. The entire thing lasts about 4 to 5 hours, and is great value for money, depending on where you make your booking.
Lesson three - be a tourist, do touristy things and have fun!

I can't tell you that a swim in the ocean is refreshing and that it will cool you off because the truth is, it won't. We went for a dip at The Walk by the Jumeirah Beach Residence. The water was warm and super salty but so beautifully clear and blue that I could see the little fish swimming around my feet. I didn't last much more than 25 minutes before I had to stop floating bout and collecting shells and get out to find a spot of shade to relax in, but shortly thereafter we sought refuge from the heat indoors, along with an ice cold bottle of water.
Lesson four - Your hotel pool is probably more refreshing, but much less fun! Look at that view. Yes, that's Atlantis waaaay back there!!

For me, Dubai is a lovely place, the buildings are beautiful, as are the people. I will definitely be going back in a year or two, but only after I've ticked off a few of the destinations on my top 10 bucketlist!

Forever New...Factory Shop!

Yes Girls! You read correctly... Forever New has a factory shop!!

Once you have calmed down, remembered how to breath normally and checked the credit available on your credit card, scroll down and have a look at the beauty that is the Forever New factory shop.

I know you're probably rolling your eyes and thinking to yourself "They probably only sell old damaged stock - It's too good to be true", because that is pretty much what I did...except for the eye rolling part... But ALAS! It is not so!!

Being the girl that I am, I LOVE shoes and all things pretty, especially Forever New goodies! So on Sunday I dragged Riaan along with me, all the way to Randburg, to go and have a look at this mystical, unheard of, magical wonderland and see what all the fuss is about...

For those of you that do not know what Forever New is...I have no words! Where have you been the past few years?? Do yourself a favour and follow them on pinterest or have a look at their official website and prepare to fall in love!

So without further ado...here it is!

Well! It was like Christmas had arrived a whole 4 months early!! I walked into the shop and *surprise* *surprise* there was something that I "Had to have!!!" A gorgeous knee high pair of grey leather boots!! Not plucking an item off of every rail took major self control!!

If you ever found yourself wondering how to get your hands on that gorgeous dress, or those amazing shoes without having to shell out your entire months clothing budget on a single item, I'd say this is the answer!!
They had almost everything, skirts, shorts, blouses, cardigans, coats, ankle boots, knee high boots, heels, summer dresses, cocktail dresses, denims, scarves, jewelry, iPhone and Ipad accessories. My only disappointment was that they didn't not have any trousers, handbags or laptop bags.

I will most definitely be going back as soon as spring is in full swing! I have a wedding coming up - any reason to buy a new dress!!

You can visit them at World Wear, corner Beyers Naude Drive and Wilson Drive, Fairlands, Johannesburg, and you can contact them here.

I hope all you wonderful little shop-a-holics find this post useful and I hope even more that this factory shop stays open for a long long time!! Happy spending!!
